Tasting Notes
Vibrant aromas of blackberry, cherry and dark chocolate, with subtle notes of cinnamon and toasty oak.
Production Notes
Like our Old Vine Zinfandel, Predator Cabernet Sauvignon is crafted to offer rich, intense and uniquely memorable flavors and vibrant aromas. This vintage enjoys our continued success with select California vineyards. The 2015 growing season was warm throughout the state, providing minimal rainfall in the winter and spring, followed by moderate summer temperatures. As a result, the fruit ripened quickly and was harvested earlier than previous years. The Cabernet grapes developed intense, fruit flavors and well-structured tannins. Overall, our winemaking team is happy to present an intensely flavorful, yet elegantly balanced 2015 Cabernet Sauvignon.
Food Pairing Notes
Our commitment to sustainable growing practices helps ensure the health and vitality of our select vineyards. “Natural Predation” is an eco-friendly strategy to control harmful critters in the vineyards. Ladybugs, a natural insect predator, along with predator mites, feed on destructive aphids. Ladybugs would suggest pairing this Cabernet Sauvignon with fresh aphids or mites – but we recommend short ribs or a juicy burger.
